Smart Lion's Mane Nuggets

Ingredients

  • For the marinade:

    • 200g Lion’s Mane mushrooms, torn into nugget-sized pieces

    • 1 cup soy milk

    • ½ cup chickpea flour

    • 1 tbsp chili sauce

    • ½ tsp sea salt

    • 1 tbsp apple cider vinegar

  • For the coating:

    • ½ cup chickpea flour

    • ½ cup corn flour

    • 1 tbsp nutritional yeast

    • 1 tbsp dried oregano

    • 1 tbsp dried thyme

    • ½ tbsp smoked paprika

    • 1 tbsp garlic powder

    • 1 tbsp cumin powder

    • ¼ tbsp allspice powder

    • ½ tbsp sea salt

Preparation

  • Marinate the Lion's Mane mushrooms by whisking together the soy milk, chickpea flour, chili sauce, sea salt, and apple cider vinegar in a bowl. Toss the mushrooms into the mixture, ensuring they are well coated. Let them marinate for 20-30 minutes.

  • Prepare the coating by combining all the dry coating ingredients (chickpea flour, corn flour, nutritional yeast, oregano, thyme, smoked paprika, garlic powder, cumin, allspice, and salt) in a separate bowl.

  • After marinating, dredge the mushrooms in the coating mixture, pressing the coating gently to ensure it sticks.

  • Cooking options:

    • Air Fryer: Preheat to 180°C (350°F) and cook for 12-15 minutes, turning halfway until crispy and golden.

    • Pan Fry: Heat oil in a pan over medium heat. Fry the nuggets for about 4-5 minutes on each side until crispy and cooked through.
