


Smart Lion's Mane Nuggets

Ingredients
For the marinade:
200g Lion’s Mane mushrooms, torn into nugget-sized pieces
1 cup soy milk
½ cup chickpea flour
1 tbsp chili sauce
½ tsp sea salt
1 tbsp apple cider vinegar
For the coating:
½ cup chickpea flour
½ cup corn flour
1 tbsp nutritional yeast
1 tbsp dried oregano
1 tbsp dried thyme
½ tbsp smoked paprika
1 tbsp garlic powder
1 tbsp cumin powder
¼ tbsp allspice powder
½ tbsp sea salt

Preparation
Marinate the Lion's Mane mushrooms by whisking together the soy milk, chickpea flour, chili sauce, sea salt, and apple cider vinegar in a bowl. Toss the mushrooms into the mixture, ensuring they are well coated. Let them marinate for 20-30 minutes.
Prepare the coating by combining all the dry coating ingredients (chickpea flour, corn flour, nutritional yeast, oregano, thyme, smoked paprika, garlic powder, cumin, allspice, and salt) in a separate bowl.
After marinating, dredge the mushrooms in the coating mixture, pressing the coating gently to ensure it sticks.
Cooking options:
Air Fryer: Preheat to 180°C (350°F) and cook for 12-15 minutes, turning halfway until crispy and golden.
Pan Fry: Heat oil in a pan over medium heat. Fry the nuggets for about 4-5 minutes on each side until crispy and cooked through.
